Farro is an ancient strain of wheat; in fact, it's one of the three "mother" wheats from which all other wheats have come. It is used in northern and central Italy and in other parts of the Mediterranean.
I like farro for its delicate nuttiness, its protein, and how good it is in soups and other dishes. You can sauce it just as you would pasta. It's very much a part of country cooking in Italy. (Learn more about farro's origins and how to use it in my book, The Italian Country Table.)
