Over the past two years, restaurateurs have found creative ways to adapt, and Carlos Avelar is no exception. He owns and operates Mawi Tortillas in Metairie with his son, Chef Will Avelar. Carlos spoke to Mark Cave of the Historic New Orleans Collection for their series, From The Frontline. Here, Carlos describes how he was able to transform the pandemic into a time of growth for his tortilleria. He begins by sharing how he settled in New Orleans.
